- 1/2 lb lean pork
- 2 tbsp vegetable oil
- 1 tsp red curry paste
- 1/2 cup shredded young bamboo shoots
- 3 kaffir lime leaves
- 1 cup coconut milk
- 10-15 sweet basil leaves
- 1-2 tbsp fish sauce
- red chile paste, to taste (1tsp?)
Directions
– cut the pork into thin strips.
– heat oil and red curry paste in a pan on high heat until curry paste bubbles
– add pork, bamboo shotos, kaffir lime leaves, coconut milk. Stir well and cook for about 10 minutes, until pork is cooked.
– Mix in basil, fish sauce, red chile paste. Serve over steamed rice
What I learned
I found (dried) kaffir lime leaves and red curry paste at a local asian supermarket. ReMake sure to take them out at the end of cooking. I added additional vegetables during the final cooking stage – red and green peppers worked really well. I used light coconut milk, which was just fine. I felt that the dish needed some more salt, but otherwise was rich and appealing.
