Ingredients

  • 1 1/2 cups whole wheat pastry flour
  • 1 cup oat bran
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp allspice
  • 1 egg
  • 1/2 cup brown sugar
  • 1/2 cup chopped dried fruit (dates, cranberries, raisins, etc)
  • 1 1/4 cup applesauce
  • 1/4 cup raspberry, or any other all-fruit jam

Directions

Preheat oven to 350

Mix the dry ingredients together in a bowl. Make a well in the center and add the egg, brown suger and fruit. Gradually stir in the applesauce, mix thoroughly.

Fill 12 muffin molds with 1/3 cup of the batter, then drop 1 tsp of jam on top of the batter, then drop another 1/3 cup of batter on top of the jam.

Bake for 25-30 minutes, until the tops are light brown.

My experience

These muffins are sturdy, but yummy. There’s a ton of fibre, they’re substantial and they made great snacks. I also added some wheat bran I had stashed in the freezer for extra “cleaning” power. I didn’t miss the oil in these at all.
